FOOD PORTIONS TO SERVE 100 PEOPLE
FRUIT COCKTAIL
One and one-half doz. grapefruit, 8 No. 2 cans shredded pineapple, 8 lbs. grapes, 2 doz. oranges, 1 doz. bananas, sugar to taste.
MEATS
Thirty-five pounds of pork, ham, beef, sausage or steak.
Buy roasts in 15 lb. pieces.
Ten beef tongues. (One tongue cuts in 20 slices.)
One 3-lb. chicken, roasted or fried, serves 6.
One 3-lb. chicken, creamed, serves 8.
Oysters, escalloped, 10 qts.
POTATOES
One bushel potatoes, mashed, hashed brown or escalloped.
Sixteen lbs. green beans, cooked with 1 lb. of bacon.
Forty-five lbs. of kraut, 15 lbs. of spareribs.
Baked beans-Eight qt. beans, 6 lbs. salt meat (shredded), 5 lbs. brown sugar.
SLAWS
Twenty lbs. shredded cabbage, 2 qts. cream with vinegar, salt and sugar to taste.
Cabbage, 20 lbs.; Spanish onions, 4; sweet green peppers, 5; sweet red peppers, 5; sugar, 5 cups; 1 five cent package of mustard seed, 1 small glass horseradish, 1 qt. vinegar, full strength, salt to taste. Make 3 or 4 days ahead, put in Jars.
Cabbage, 20 lb., shredded; pineapple, 3 cans, size 1 lb. 14 oz.; marshmallows, 4 lb., cut fine; mayonnaise, 2 qt., thin with juice of pineapple.
CHICKEN SALAD FOR 100 PEOPLE
Thirty lbs. chicken, cut in smal1 pieces; 13 large bunches of celery (diced). (This makes equal parts of each.)
Oil Dressing - One qt. can Wesson oil, 8 eggs, j uice of 8 lemons, /2 box of ten cent mustard. Mix this with equal amounts of cooked mayonnaise.
Four lbs. butter. (One lb. cuts 48 pats).
Cheese, 4 lbs.
Rolls, 200.
Coffee, 3 lbs.
Coffee cream, 3 qts.
Fruit spread, 8 qts.
DESSERTS
Berries, 20 qts.
Seventeen 10-inch pies. (Cut in 6 pieces).
Five large cakees. (Cuts in 20 pieces each).
FRUIT SALAD
Four lbs. white grapes, 4 lbs. blue grapes, 6 No. 1 cans shredded pineapple, ~ do~, lemons, 3 doz. oranges, 3 lbs. marshmallows (diced), 1-3 crate iceberg head lettuce. Make dressing of 1 1/2 doz. eggs, fruit juice and 4 qts. whipping cream.
CORN BREAD FOR FIFTY SERVINGS
One qt. buttermilk, 4 eggs, 1 c. lard and butter (mixed), 1 c. sugar, 2 c. flour, 5 c. corn meal, 3 level t. soda (sifted in flour), salt. Repeat ~ times for 100.
ESCALLOPED TOMATOES (12 Servings)
One and one-half cans tomatoes (large size), 1/2 C. sugar, 1 pt. milk, 1 doz. crackers, season with salt, pepper to taste. Bake light brown.
CORN PUDDING
(12 Servings)
Two and one-half cans corn, 2 eggs, 1/2 C. sugar, 1 pt. milk. Season with butter, salt and pepper to taste. Bake light brown.
WELCH SLAW FOR 25
Five lbs. cabbage, 2 Spanish onions, 3 sweet green peppers, 3 sweet red peppers, 1/2 tb. mustard seed, 2 tb. horseradish, 1 c. vinegar, 1 c. sugar. Salt to taste. Make 2 or 3 days ahead; place in jars.
HOW TO MAKE COFFEE IN QUANTITY
To 1 lb. coffee, 2 gal. water, makes 60 c. and takes 1 qt. cream.
