BETTER FUDGE
Seven-eights c. water, 3 tb. cocoa, 2 tb. butter, 2 c. sugar, 1/2 tb. cornstarch, % t. salt, /2 C. nuts, 1 t. vanilla. Boil until mixture forms soft ball in cold water, cool until luke warm, add nuts and beat until it thickens. When firm cut into squares.
PERFECT FUDGE
Two c. sugar, 1 c. of milk, 2 tb. cocoa, 1 t. butter, 1 t. vanilla. Boil first three together until it forms soft ball. Do not stir. Put in butter and vanilla. Get absolutely cold. Stir with wooden spoon-mold.
CHOCOLATE FUDGE
Two c. sugar, 3 tb. cocoa, 1 c. milk, 1-3 c. butter. Stir sugar and cocoa together, add milk and mix thoroughly. Put on fire and stir until the mixture comes to a boil. Cook until soft bal1 is formed in cold water, remove from fire, add butter and let cool. Add vanilla and beat until light and creamy. When cool cut in squares.
MAPLE FUDGE
Use soft white sugar and maple syrup. Wet with milk and cook to a very soft ball. Add chop nuts if desired. Beat fast.
PEANUT BUTTER FUDGE
Two c. white sugar, 2-3 c. milk, 4 tb. peanut butter, few grains salt, 1 t. vanilla, 1-3 c. raisins. Bring sugar and milk to boiling point and let boil until a soft ball forms, when mixture is tried in cold water. Remove and add peanut butter, salt and vanilla. Beat until creamy, add raisins (seeded) and cut in pieces-turn into buttered pan to ;/4 in. in depth, cool and cut into squares.
PEANUT BRITTLE
Two c. chopped roasted nuts, 3 c. granulated sugar. Put sugar in frying pan. Stir over slow fire. It will lump, then gradually melt. When pale coffee color and clear, add nuts and pour quickly on greased pan. When cold, break into pieces.

One c. granulated sugar, 1/2 c. white Karo syrup, ~ c. water. Boil until it threads. Pour in 1 c. peanuts (raw). Boil very slowly about 6 min. Put in 1 t. vanilla and heaping t. soda. Butter plate and drop and spread on it like pan cakes.
PEANUT BRITTLE
One and one-half lbs. sugar, 3/4 lb. glucose, 2 oz. butter, 1/2 tb. vanilla, )/4 lb. raw peanuts, 1 heaping t. soda, 2-3 pt. water. Put sugar, glucose and water on hot fire and stir until it commences to boil; wipe down sides of pan; cook until thermometer reads 275. put in peanuts and cook, stirring all the time; cook until the peanuts are done. They will be golden brown in color; add soda just before pouring out.
